Healthy Hearty Veggie Soup |

This hearty vegetarian soup was a perfect lunch, accompanied with 6-grain bread and butter. A healthy, filling meal that will use up those veggies in your fridge! Ingredients:
3 cups cooked green lentil beans |
3 carrots, diced |
1-2 onions, diced |
2 cloves garlic, diced |
5-6 sun-dried tomatoes |
2 t olive oil |
1 t salt (measure the following spices to your taste) |
1 t curry |
1 t herbs of provence |
1 t pepper |
1 t basil |
Directions:
1. Dice veggies, set aside. 2. cook carrots in medium-sized pot by boiling on medium heat for 5 minutes. 3. drain carrots and combine them with the cooked, drained lentils in the pot. 4. turn heat on low, add diced onions and garlic while stirring simultaneously. Add dried tomatoes. 5. Add oil and spices. 6. Let simmer on low heat for about 10 minutes (or as long as the flavors need to mix together). Give the soup another good mix, and serve! |
