A low cholesterol and low fat muffin Ingredients:
3 egg whites |
3/4 cup skim milk |
1 cup low-fat yogurt |
3/4 cup applesauce |
2 cups wholemeal flour |
1/2 cup rolled oats |
1/2 cup oat bran |
3 teaspoons baking powder |
2 teaspoons cinnamon |
3/4 cup raisins |
3/4 cup dried apricot, diced |
Directions:
1. Beat egg whites lightly. 2. add milk, yoghurt and apple sauce. 3. In a separate bowl combine dry ingredients and dried fruit. 4. Add liquid to dry ingredients, combine with care. 5. Spoon into muffin tins. 6. Bake 180 C for 20 minutes. |
