This is a great one for families. Dads and teens will love it! This is a low-cal, low-fat recipe. You can easily add bacon pieces, sausage chunks and whatever else you like. Ingredients:
500 g potatoes, diced |
2 shallots, sliced |
1 tablespoon olive oil |
2 teaspoons dried oregano |
200 g small mushrooms |
4 eggs |
Directions:
1. Heat oven to 200C/fan 180C/gas 6. 2. Tip the potatoes and shallots into a large, non-stick roasting tin. 3. Drizzle with the olive oil, sprinkle over with the oregano. 4. Mix everything together well. 5. Bake for 15 minutes. 6. Add the mushrooms. 7. Cook for a further 10 minutes until the potatoes are browned and tender. 8. Make four gaps in the vegetables. Crack an egg into each space. 9. Return to the oven for 3 to 4 minutes or until the eggs are cooked to your liking. |
