Cold edamame salad Ingredients:
5 tbsp red wine vinegar |
2 tbsp olive oil |
1/2 cup lime juice |
1/3 cup parsley |
3/4 tsp salt |
2 garlic cloves |
16 ounce edamame |
3 cups corn |
1 red pepper, diced |
1/2 cup cucumber, diced |
15 ounce black beans |
Directions:
1. Whisk together vinegar, olive oil, lime juice, parsley, salt and cloves 2. Stir in edamame, corn, red pepper, cucumber and rinsed black beans. 3. Let marinate 2 hours |
