Healthy Curried Chickpeas & Cauliflower With Rice |

Very quick, healthy and tasty main or side dish. Use the rice of your choice. Ingredients:
1/2 teaspoon curry powder |
1 small onion, chopped |
1 tablespoon olive oil |
1 1/2 cups cauliflower, chopped |
1/2 cup canned chick-peas, rinsed and drained |
2 tablespoons raisins |
1 cup cooked rice |
1 scallion, chopped (optional) |
Directions:
1. Saute curry powder and onion in olive oil for 3 mintues. 2. Add cauliflower and cook for 8 mintues, or until tender. 3. Add chickpeas and raisens and cook for 3 to 4 minutes, or until warm. 4. Place curry mixture on top of rice and top with scallion. |
