Healthy creamy Broccoli Soup

Glucomannan (fiber powder) makes this soup creamy while keeping it very healthy and low calorie, yet filling.
Ingredients:
1 tablespoon extra virgin olive oil
1 large yellow onion, quartered
3 1/2 cups water
3 cups broccoli, cut into large chunks
1 teaspoon salt
1 tablespoon black pepper
10 g glucomannan
2 garlic cloves, minced
Directions:
1. In large pot, heat oil to medium. Add onion and cook for 15 min., until soft. Add water, broccoli, salt and pepper. Cook for 20 min., until broccoli is tender.
2. Transfer soup to food processor. Add Glucomannan and garlic. Blend until creamy. Let sit for a few minutes to cool slightly before eating.
