Healthy Cilantro Lime Vinaigrette Dressing |

This is a recipe from Phoenix Home and Gardens Magazine . I like to make it once in a while for a green salad - it's delicious, healthy and so simple to make. Zest the lime a little if you want extra flavor. Adjust the cilantro to your tastes. Ingredients:
1 -2 cloves peeled garlic |
1 tablespoon diced shallot |
1 lime, juice of |
1/2 cup rice wine vinegar |
1 -2 teaspoon honey |
1/3 cup grapeseed oil |
1 teaspoon kosher salt |
black pepper |
3 tablespoons chopped fresh cilantro |
Directions:
1. Place all EXCEPT cilantro in a blender and blend until smooth. 2. Stir in the chopped cilantro and serve over a fresh salad. |
