Easy to whip up on a weeknight. Lots of fresh ingredients and very good for you! Ingredients:
4 ounces boneless skinless chicken breasts |
1 cup onion, chopped |
1 cup broccoli floret |
1 cup green pepper strip |
1/4 cup frozen edamame |
2 tablespoons szechuan sauce |
1 cup cooked brown rice |
Directions:
1. Coat a hot skillet with cooking spray. 2. Cut the chicken breast into 1 inches pieces and add to the pan. 3. Cook until chicken pieces turn white. 4. Add all the vegetables and stir continually until cooked through. 5. Add schzewan sauce and stir to coat chicken and vegetables. 6. Serve over brown rice. |
