Just something a little lighter for summer. Ingredients:
2 cups chicken |
2 tablespoons olive oil |
1 tablespoon soy sauce |
3 cups cooked white rice |
3 1/3 cups mixed vegetables |
3 garlic cloves |
Directions:
1. heat the olive oil in a pan over medium heat and add the garlic. 2. Once the garlic has been sizzling for a minute add the chicken (it should be diced). 3. Stir occasionally for 3 to 4 minutes. 4. add the soy sauce. 5. stir for another minute. 6. add the vegetables. 7. stir occasionally for yet another minute. 8. mix in the rice and turn the heat up to medium high and stir for about 3 minutes. 9. serve and enjoy. |
