Healthy Carrot Banana Muffins |

Delicious, moist, healthy muffins. Great for a snack. Ingredients:
3/4 cups whole wheat flour |
1/4 cup oats |
2 tbsp flax seed |
1 teaspoon cinnamon |
1/2 teaspoon each: allspice and cloves |
1/2 tsp salt |
3/4 cup sugar (can substitute half with low cal sweetner) |
1/4 cup canola or olive oil |
1 mashed ripe banana |
2 large eggs lightly beaten |
1 1/4 cups grated carrot |
1/2 cup raisins (optional |
Directions:
1. Pre-heat oven to 325 degrees 2. Place first 6 ingredients (until salt) in blender or food processor and blend until fine. 3. Stir all remaining ingredients together until well combined. 4. Add dry ingredients and stir until moist. 5. Pour into muffin tins and bake for 25 minutes or until just firm on top. 6. Cool. YUM |
