Delicious breakfast sandwich. Similiar to Egg benedicts. Ingredients:
2 english muffins, split into halves, toasted |
2 tbsp plain fat free yogurt |
1 tbsp dijon mustard |
1/2 tsp dried basil |
4 slices canadian bacon |
4 large tomato slices (about 1/3 inch thick), optional |
2 slices reduced fat swiss cheese, cut crosswise into halves |
4 poached eggs, warm |

Directions:
1. Preheat broiler 2. Place muffin halves on baking sheet or broiler pan 3. Combine yogurt, mustard, & basil in small bowl; stir til well blended 4. Spread 1/4 of yogurt mixture evenly over each muffin half 5. Top each muffin half with bacon & tomato slice 6. Top each tomato slice with cheese slice half 7. Place muffin on broiler pan; broil 4 inches from the heat source, 1 min or til cheese begins to brown slightly 8. Top with poached eggs 9. Sprinkle with paprika, if desired 10. Enjoy! |
