What a delightful breakfast sandwich - This would be a fantastic weekend breakfast for the family!! This fairly simple sandwich is a great marriage of flavors. Ingredients:
2 eggs |
1 tablespoon olive oil |
4 ounces grilled country fresh ham |
4 slices toasted multigrain bread |
2 teaspoons butter |
4 ounces mayonnaise, fat-free |
4 ounces provolone cheese, shredded |
red onion (few slices) |
2 ounces baby spinach |
ground pepper |
Directions:
1. Cook eggs in olive oil and grill ham in same pan. 2. Toast bread, butter lightly and spread with mayonnaise. 3. Layer egg, ham, cheese, onion and spinach on bread. 4. Add 4-5 turns of pepper to each sandwich, cut and serve. |
