1/2 c. whole wheat flour |
1/2 c. oats |
1/4 c. wheat germ |
2 tbsp ground flax seed |
3 tbsp brown sugar, packed |
1 tsp cinnamon |
1/2 tsp baking soda |
1/8 tsp salt |
1/4 c. unsweetened applesauce |
1 tbsp honey |
2 tbsp oil |
1/2 c. pumpkin puree |
1 ripe banana, mashed |
1 tsp vanilla |
1/4 c. chopped dried raisins |
1/4 cup dried figs |
1/4 c. chopped almonds |
Directions:
1. Preheat oven to 315 degrees and prepare 8x8 baking pan. 2. -In medium bowl, combine flour, oats, bran, protein powder, flax seed, baking soda, cinnamon, and salt. 3. -In bowl of stand mixer, combine pumpkin, banana, applesauce, honey, oil and vanilla until thoroughly blended. 4. -Add brown sugar and mix until completely incorporated. 5. -Add flour mixture and blend until just combined. 6. -Remove bowl from mixer and stir in dried fruit and nuts. 7. Spread batter into pan and bake for 20 minutes. 8. -Cool and cut into 16 bars. |
