A good moist healthy bran muffin recipe; replace the apples with mashed bananas or other fruit if you like. Ingredients:
1 egg |
1 cup milk |
2 tbsp butter, melted |
1 cup wheat bran |
1/2 cup flour |
1/2 cup whole wheat flour |
1/4 cup brown sugar |
1/2 tsp cinnamon |
1/4 tsp salt |
1 tbsp baking powder |
2 med apples, peeled and diced |
Directions:
1. sift dry ingredients. then combine with liquid ingredients. bake in greased muffin tins at 400 degrees until firm. |
