I actually use 1 can of Eden Organic Black Soybeans & 1 can Aduki beans but the recipe analyzer won't accept the black soybeans. I also prefer canned toms w/mild green chilis for a little more flavor. Ingredients:
30 oz (eden foods) aduki beans, organic |
15 oz (eden foods) navy beans, organic |
15 oz chili beans, organic |
14 1/2 oz diced tomatoes |
1 yellow pepper |
1 red pepper |
2 cucumbers |
1/2 medium onion |
2 cloves garlic |
1/4 cup fresh basil |
1/4 cup dijon mustard |
2 t balsamic vinegar |
1/4 cup olive oil |
2 t brown sugar |
1 salt and pepper |
Directions:
1. Rinse beans. 2. Chop peppers, cukes, onion etc. Add to beans. 3. Also add canned tomatoes w/green chilis. 4. For vinaigrette: mix garlic, mustard, vinegar, olive oil, brown sugar, salt and pepper - then add to beans and vegs. Mix. 5. Stays well in fridge for a couple of days. Is great for side salad, also excellent with chopped, cooked chicken breast added for full meal. |
