Healthy Banana Protein Muffins |

Easy bake with 200 calories and 15 grams of protein per muffin. Ingredients:
2 cups spelt flour (self-raising wholemeal) |
1/4 cup brown sugar |
1 tablespoon of maple syrup |
6 scoops protein powder |
1 cup soy milk |
1 egg |
2 tablespoons olive oil (or margarine) |
1 teaspoon vanilla essence |
1/2 a teaspoon cinnamon |
2 ripe bananas (1 or 2) |
Directions:
1. preheat oven to 175oC. 2. combine milk, egg, olive oil, vanilla and banana, and blend in a mixing jug 3. place flour, sugar and all other remaining ingredients in a large mixing bowl, combine. Mix in milk mixture. 4. Pour mixture into a 12 hole greased muffin tray 5. Bake for 20-25mins at 175 C |
