I created this recipe in my continuing search for healthy, high-fiber recipes for my husband. Ingredients:
1 1/2 cups white flour |
1 cup whole wheat flour |
1/2 cup oat bran |
2 cups quick oats |
4 teaspoons baking powder |
2 teaspoons baking soda |
1 teaspoon salt |
1/2 cup chopped nuts |
1/2 cup chopped dates |
3/4 cup sugar |
2 eggs |
1/2 cup unsweetened applesauce |
1 cup skim milk |
2 cups mashed bananas (, about 4 or 5 medium size) |
Directions:
1. Preheat oven to 350F; spray two loaf pans with non-stick cooking spray. 2. In a medium size bowl, combine flours, oat bran, oats, baking powder, baking soda, salt, nuts& dates; set aside. 3. In a large bowl, combine sugar and eggs. 4. Stir in applesauce, bananas& milk; combine thoroughly. 5. Add dry ingredients to banana mixture; stir until blended. 6. Pour batter evenly into prepared loaf pans. 7. Sprinkle tops with cinnamon sugar; place in oven. 8. Bake 50-60 minutes or until done. |
