Healthy Banana Nut Muffins |

Tasty low sugar muffins. You can add the brown sugar or leave it out. I use large silicone muffin pans and get 11 muffins. Ingredients:
4 bananas |
1 cup applesauce |
2 eggs |
1 1/2 cups whole wheat pastry flour |
1/2 cup ground flax seed |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/4 cup brown sugar |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/2 cup walnuts, chopped |
Directions:
1. Mix the bananas, applesauce & eggs together (and sugar if you are using it). In a separate bowl mix all other dry ingredients, combine with banana mixture and nuts. Dont over mix 2. Bake at 350F for about 20 minutes. |
