Healthy Banana Nut Muffins |

Spin-off of my good friend's already low-fat recipe. This recipe is even more healthy and a favorite of all who have tried it. Enjoy! Ingredients:
1/2 cup oat bran |
1/2 cup whole wheat flour |
1/4 cup brown sugar |
1 cup soymilk lite |
1/4 cup egg white |
1 tablespoon canola oil |
2 teaspoons baking powder |
2 teaspoons baking soda |
1 banana |
1 teaspoon vanilla extract |
1/4 cup walnuts |
Directions:
1. Preheat oven to 430 degrees. 2. Pour all ingredients into a bowl, and mix thouroughly (sometimes it helps to mash the banana in a seperate container before adding to bowl). Also, if you prefer your muffins sweeter, add around 5 or 6 artificial sweetner packets to the batter. 3. Cook for around 10 minutes. |
