I just made this up as I went along. I'm eating the very first one now. It's pretty good. Ingredients:
1/2 cup oat bran |
1/2 cup kamut flour |
1/4 cup brown rice flour |
1 cup whole wheat flour |
1 teaspoon baking soda |
1 1/2 teaspoons baking powder |
1 teaspoon cinnamon |
1/2 teaspoon salt |
1/2 cup brown sugar |
1/4 cup flax seed |
1 teaspoon vanilla extract |
1/2 teaspoon almond extract |
4 egg whites |
1/2 cup vanilla-flavored soymilk |
2 cups mashed bananas |
1/4 cup olive oil |
Directions:
1. Mix all dry ingredients together. 2. Mix remaining ingredients. 3. Combine all ingredients, mix until completely moist. 4. Preheat oven 400 degrees. 5. Bake for 20 minutes in a muffin tin coated with cooking spray. |
