2. cup whole wheat four
3. cup all-purpose flour
4. /4 tsp baking soda
5. /4 tsp salt
6. /2 cup firmly-packed light brown sugar
7. /4 cup canola oil
8. large egg, lightly beaten
9. /2 cup low-fat buttermilk
10. tsp vanilla extract
11. medium-sized ripe bananas, mashed

13. Preheat oven to 350 degrees. Coat an 8 1/2 inch x 4 1/2 inch loaf pan with nonstick cooking spray.
14. Whisk flour, baking soda and salt together in a large bowl. Stir in brown sugar.
15. In a medium bowl, combine oil, egg, buttermilk and vanilla extract. Add these ingredients to the dry ingredients. Stir in mashed bananas.
16. Pour batter into the loaf pan and bake in the oven for 50-60 minutes, until a toothpick placed in the center comes out clean.
17. Yield 12 slices
