High in fiber, delicious apple cinnamon muffins. Perfect for on the go. Ingredients:
3 cups whole wheat flour |
1 cup brown sugar |
3 teaspoons baking powder |
3 teaspoons cinnamon |
1 cup milk |
1/3 cup butter, melted |
1/3 cup unsweetened applesauce |
2 eggs, beaten |
2 cups apples, chopped |
Directions:
1. Preheat oven to 375. 2. In a large bowl, sift together flour, baking powder, and cinnamon. Mix. 3. In another bowl, cream the brown sugar into the eggs, then add milk, melted butter and applesauce. 4. Stir liquid mixture into flour mixture until thoroughly moistened. 5. Mix in chopped apples. 6. Spoon batter into muffin tins of your choice. 7. For normal sized muffins, bake at 375 for 20-25 minutes. For large muffins, increase baking time to 30-35 minutes. (Servings denotes large muffins). |
