Healthy and Tasty Carrot Bread |

a light but moist carrot bread Ingredients:
1 1/2 cups shredded carrots |
8 ounces crushed pineapple |
1/4 cup canola oil |
1/2 cup brown sugar |
1/8 cup splenda sugar blend for baking |
1/2 cup raisins |
1/2 cup chopped pecans |
1 granny smith apple, pealed & chopped and cooked (microwave for 4 minutes with tbl water) |
1/2 cup egg white |
1 cup flour |
1/2 cup whole wheat flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
3 teaspoons cinnamon |
1/2 teaspoon nutmeg |
1/4 teaspoon salt |
Directions:
1. Mix flour, baking powder, baking soda, cinnamon & nutmeg. 2. and salt together in a bowl and set side. 3. In another bowl, whisk together egg whites, oil, sugar and pineapple. 4. Pour egg mixture in to flour and stir to incorporate. 5. Mix in carrots, nuts raisins and pour in a 9 by 9 baking pan. 6. Bake 30 to 40 minutes at 350 degrees until toothpick comes out clean when tested. |
