Healthy (And Easy) Honey Bran Muffins

This is a yummy recipe using raisin bran cereal as a base. It's easy - dump it all in the same bowl and go!
Ingredients:
2 cups raisin bran cereal, slightly crushed
1/3 cup boiling water
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup brown sugar, packed
1/2 cup splenda granular
1/3 cup unsweetened applesauce
1/3 cup egg substitute
1/3 cup honey
Directions:
1. Combine crushed cereal and boiling water in a large mixing bowl. Let sit 5 minutes.
2. Add remaining ingredients, Stirring just until moistened.
3. Fill sprayed muffin cups (15 standard or 24 mini).
4. Bake 18 to 20 minutes (standard cups) or 12 minutes (mini cups).
