Healthy (And Easy) Honey Bran Muffins |

This is a yummy recipe using raisin bran cereal as a base. It's easy - dump it all in the same bowl and go! Ingredients:
2 cups raisin bran cereal, slightly crushed |
1/3 cup boiling water |
1 cup whole wheat flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 cup brown sugar, packed |
1/2 cup splenda granular |
1/3 cup unsweetened applesauce |
1/3 cup egg substitute |
1/3 cup honey |
Directions:
1. Combine crushed cereal and boiling water in a large mixing bowl. Let sit 5 minutes. 2. Add remaining ingredients, Stirring just until moistened. 3. Fill sprayed muffin cups (15 standard or 24 mini). 4. Bake 18 to 20 minutes (standard cups) or 12 minutes (mini cups). |
