Healthy and Delicious Pumpkin Cookies |

I bake this cookies with the pumpkin puree I freeze in fall. They are big winners over here! Ingredients:
1 cup white sugar |
1 cup brown sugar |
3/4 cup margarine |
1/4 cup applesauce |
2 cups pumpkin puree |
3 eggs |
2 teaspoons vanilla extract |
1 1/2 cups all-purpose flour |
2 cups whole wheat flour |
1/2 cup wheat germ |
2 teaspoons baking powder |
2 teaspoons ground cinnamon |
1/2 teaspoon ground cloves |
1 teaspoon cardamom |
1 cup chocolate chips |
Directions:
1. Preheat oven to 375 degrees F (190 degrees C). 2. Cream the sugars and, margarine together. Mix until light and well combined. 3. Add eggs, one at a time, pumpkin, spices, and vanilla. 4. In another bowl mix the flours, wheat germ and baking soda. 5. Stir the flour mixture, one cup at a time into the creamed mixture. Mix until combined. Stir in the chocolate chips. 6. Drop by teaspoons onto an ungreased baking sheet. Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes or until set. Let cookies cool on a rack. |
