Healthier version of recipe by momofallboys. These are a cakey cookie with a delicate flavor. Ingredients:
1 cup butter substitute |
1/2 cup applesauce |
1 1/2 cups creamy peanut butter or 1 1/2 cups crunchy peanut butter |
1/4 cup honey |
2 tablespoons honey |
1 cup sugar |
1 1/2 cups brown sugar |
3 eggs |
3/4 teaspoon salt |
1 1/2 teaspoons baking powder |
2 1/4 teaspoons baking soda |
2 3/4 cups flour |
1 cup wheat flour |
12 ounces peanut butter chips |
1 cup nuts |
Directions:
1. Cream peanut butter and margarine and applesauce, add honey, add sugars and mix well. 2. Add eggs and mix until creamy. 3. Add remaining ingredients. 4. Chill for one hour. You don't have to wait the full hour for the first batch. 5. Drop by teaspoonful onto cookie sheets - do not flatten. 6. Bake at 325°F for 12-15 minutes. 7. Cool on cookie sheets for about 5 minutes then transfer onto newspaper to soak up extra grease. 8. Store in airtight container. 9. You could also try: adding cinnamon or baking cocoa, using low fat peanut butter, or egg substitute or egg whites. |
