Flax, yogurt, AND lots of bananas! Super moist and fluffy Ingredients:
4 1/2 cups mashed bananas |
1 cup low-fat vanilla yogurt |
1 cup butter |
8 egg whites |
2 egg yolks |
1 1/2 cups sugar |
1 1/2 cups brown sugar |
4 1/2 cups flour |
3/4 cup ground flax seeds |
3 1/4 teaspoons baking soda |
3/4 teaspoon salt |
2 teaspoons cinnamon |
1/2 teaspoon allspice |
Directions:
1. Mix first four ingredients and whip on high speed until slightly fluffy. 2. Add dry ingredients and blend. 3. Bake 350. About 35 minutes for mini-loaf. |
