Healthier Than Kfc's Cole Slaw |

This is a much healthier version than the KFC clone by Todd Wilbur, and still TASTES GREAT. I changed ingredients to make it more approachable on a low cal, low carb or diabetic diet. It's perfect for me. I don't want to lose this recipe. Cook time is time to chill, so prep is really quick. Make it early in the day and it will be ready for afternoon picnics and barbecues. Ingredients:
16 ounces coleslaw mix (shredded cabbage with carrot) |
1/2 cup fat-free mayonnaise |
1/2 teaspoon white pepper |
1/2 teaspoon kosher salt |
1/3 cup splenda granular |
1 tablespoon onion powder |
1 tablespoon parsley flakes |
1 teaspoon celery seed |
1/2 cup low-fat buttermilk |
3 tablespoons lemon juice |
Directions:
1. Pulse cole slaw mix in a food processor until finely chopped, or chop by hand. 2. Combine remaining ingredients in a bowl with a whisk. 3. Add cole slaw mix, stirring well. 4. Chill several hours before serving. |
