This recipe is from Oxygen magazine. Simple Seafood Alfredo without all of the fat.
Ingredients:
3 cups of uncooked brown rice
6 cups fat-free chicken broth
1/2 lb cooked shrimp
1/2 lb cooked scallops
1 cup fat free ranch dressing
chopped broccoli, as desired
Directions:
1. Boil rice in fat-free chicken broth according to package instructions. Stir in other ingredients and serve.
