Healthier Pumpkin Cookies |

This is a redo of my Grandmother's Pumpkin Cookies. They were not very unhealthy to begin with but I have tried to make them healthier and they turned out pretty good. I am curious about the nutritional value that comes up here and wanted to share them with anyone who is looking for healthier treats. Ingredients:
2/3 cup white sugar |
2/3 cup brown sugar |
1/3 cup unsweetened applesauce |
1/2 cup egg beaters egg substitute |
1 teaspoon vanilla |
1 teaspoon lemon rind |
1 teaspoon lemon juice |
1 cup pumpkin |
1 1/2 cups all-purpose flour |
1 cup whole wheat flour |
2 tablespoons ground flax seeds |
1/4 teaspoon salt |
1/4 teaspoon ginger |
4 teaspoons baking powder |
1/4 teaspoon allspice |
1 teaspoon nutmeg |
1 teaspoon cinnamon |
1 cup raisins |
1/2 cup nuts, chopped (optional) |
Directions:
1. Cream sugars and applesauce. Add egg beaters, pumpkin and lemon rind & juice. Mix dry ingredients together and mix in with wet ingredients, just until mixed. Add raisins, nuts, or other add ins. Drop by tablespoonsful onto baking sheet lined with parchment paper. Bake at 350 for about 15 minutes. 2. I also like to add a mixture of craisins and semi sweet chocolate chips instead of the raisins. |
