Healthier Pumpkin Chip Cookies |

These are a favorite around my house. They have no oil or eggs in them but the pumpkin keeps them moist. This recipe is also easy to halve or double. And you can change this recipe easily by using any kind of chips or by repacing the chips with raisins. I have also used candied fruit at christmas time in place of the chips. Ingredients:
4 cups solid pack pumpkin |
1 1/2 cups sugar |
1 1/2 cups packed brown sugar |
3 cups oatmeal |
4 cups flour |
3 teaspoons baking soda |
3 teaspoons baking powder |
2 teaspoons cinnamon |
1 teaspoon salt |
2 cups carob chips |
2 cups peanut butter chips |
Directions:
1. Preheat oven to 375°. 2. Put oatmeal in blender/food processor and grind until fine powder. 3. Combine all ingredients. 4. Drop by rounded teaspoons on baking sheets. 5. Bake for 10 minutes on slightly greased sheet pan. Remove from tray immediatly. |
