Healthier Poppy Seed Salad Dressing for 2 |

I'm always trying to make lighter salad dressings. Recently, I learned the trick of using water and cornstarch to replace most of the oil in dressing recipes. This version is much healthier and soo yummy! Ingredients:
1/4 cup water |
1/4 cup cider vinegar |
1 tablespoon white sugar |
1 teaspoon extra-virgin olive oil |
1 teaspoon cornstarch |
1/2 teaspoon salt |
1/4 teaspoon onion powder |
1/4 teaspoon mustard powder |
1/4 teaspoon poppy seeds |
Directions:
1. Mix water, vinegar, sugar, olive oil, cornstarch, salt, onion powder, mustard powder, and poppy seeds in a saucepan. Bring mixture to boil; cook, whisking constantly, until dressing is thickened, 30 seconds. Remove from heat and cool. |
