Healthier Mexican Casserole |

Just a lighter version of a Mexican casserole.... Ingredients:
1 lb ground turkey |
1 1/4 ounces taco seasoning (or if you like to make your own) |
3/4 cup water |
1 (15 ounce) can black beans |
1 (6 ounce) can tomato paste |
1 (14 ounce) can enchilada sauce |
1 (4 ounce) can green chilies, chopped |
3/4 cup mexican blend cheese (or whatever you like) |
10 corn tortillas, cut in 4 quarters |
Directions:
1. Preheat oven to 450 degrees. 2. Brown grown turkey 3. Add taco seasoning and water and simmer uncovered for about ten minutes. 4. Puree black beans with green chilies and tomato paste. 5. Layer in a 9 by 13 inch casserole dish with enough enchilada sauce to cover bottom, then tortillas, 1/3 of bean mixture, 1/3 of taco meat, 1/3 of cheese, repeat and top with the rest of enchilada sauce 6. Bake for about 30 minutes. |
