We decreased the fat and added protein to this recipe by substituting tofu for one avocado! Keep the trend going by serving with multi grain or baked tortilla chips. Ingredients:
3/4 cup crumbled tofu |
2 avocados - peeled and pitted, divided |
1 lime, juiced |
1 teaspoon salt |
1/2 cup diced onion |
3 tablespoons chopped fresh cilantro |
2 roma (plum) tomatoes, diced |
1 teaspoon minced garlic |
1 pinch cayenne pepper (optional) |
Directions:
1. Place tofu and one avocado in a food processor and blend until smooth. Mash together the remaining avocado, lime juice, and salt in a bowl, . Mix in tofu-avocado mixture, onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately. |
