A lighter modified version that started with the Banana Bread recipe in The King Arthur Flour Company Bakers Companion Cookbook. Ingredients:
1 3/4 cups flour |
1 cup whole wheat flour |
3/4 cup sugar |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
3 tablespoons flax seed meal |
1 cup light sour cream |
2 eggs |
1/2 cup applesauce |
2 teaspoons vanilla extract |
2 bananas, mashed |
Directions:
1. Preheat oven to 350 degrees. 2. Mix together flours, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and flaxseed meal. 3. In a separate bowl, mix togther remaining ingredients. 4. Add dry ingredients to wet and stir until just combined. 5. Pour into a greased 9 x 5 inch loaf pan. 6. Bake for approximately 60 minutes or until a tester inserted in the center comes out clean. Tent with foil if bread is getting too brown. |
