Using a weight watchers recipe and some creativity of my own, this is a tasty, yet lower-calorie version of our favorite comfort sauce: alfredo. Ingredients:
1 tablespoon butter, margarine can be used instead |
2 small garlic cloves, minced |
1 tablespoon all-purpose flour |
1 1/3 cups skim milk |
2 tablespoons light cream cheese |
1 1/4 cups fresh parmesan cheese, freshly shredded, divided |
1/4 cup sun-dried tomato, chopped (optional) |
2 teaspoons flat leaf parsley, chopped |

fresh ground pepper |
Directions:
1. Melt butter (or margarine, if desired) in a saucepan over medium heat. 2. Add garlic, saute 1 minute. 3. stir in flout. 4. gradually add milk, stirring with a whisk until blended. 5. cook 8 minutes until think and bubbly, stirring constantly. 6. Add cream cheese; cook 2 minutes, stirring constantly. 7. stir in Sundried tomatoes, if desired. 8. Add 1 cup parmesan cheese, stirring constantly until cheese melts. 9. Pour over pasta; toss well to coat. 10. Sprinkle with remaining 1/4 cup parmesan cheese, parsley and pepper. |
