Oil Free Zucchini Bread. Hopefully I'll find a way to make it low-sugar/ sugar-free! Ingredients:
3 eggs |
1 1/2 cups white sugar |
1/2 cup brown sugar |
1 cup unsweetened applesauce |
1 teaspoon vanilla |
2 cups raw shredded zucchini |
3 cups flour |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/2 cup slivered almonds |
1/2 cup grated carrot |
Directions:
1. Beat eggs, add sugars. Add remaining ingredients. Blend well. Bake in greased loaf pan for 1 hour at 325 degrees. |
