1 1/2 cup oat bran |
1 cup flour |
1 cup ground flaxseed |
1 cup wheat bran |
1 tbls. baking powder |
1 tsp cinnamon |
1/2 tsp salt |
1 cup brown sugar |
3 eggs (or egg substitute) |
1 orange; quartered/peeled/seeded |
1 cup buttermilk (or milk/soymilk) |
1/4 cup canola oil |
1 tsp baking soda |
1 tsp vanilla |
1 cup golden raisins |
1 apple, peeled & grated |
1 1/2 cup carrots, shredded |
1 cup chopped nuts |
Directions:
1. Muffins: 2. Combine in large bowl: 3. 1 1/2 cup Oat Bran 4. 1 cup Flour 5. 1 cup Ground Flaxseed 6. 1 cup Wheat Bran 7. 1 Tbls. Baking Powder 8. 1 tsp cinnamon 9. 1/2 tsp salt 10. Mix in Blender: 11. 1 cup Brown sugar 12. 3 eggs (or egg substitute) 13. 1 orange; quartered/peeled/seeded 14. 1 cup Buttermilk (or milk/soymilk) 15. 1/4 cup Canola Oil 16. 1 tsp Baking Soda 17. 1 tsp Vanilla 18. Stir in: 19. 1 cup Golden Raisins 20. 1 Apple, peeled & grated 21. 1 1/2 cup Carrots, shredded 22. 1 cup chopped Nuts 23. Divide batter evenly among 24 muffins cups –lined or sprayed. 24. Bake 375° for 18 – 20 minutes or until tooth pick comes out clean. 25. Cool in pan 5 minutes before removing to a cooling rack. 26. These freeze and reheat very well. |
