The whole family loves them and they are good for you. I usually make them the jumbo size (makes 12 jumbo). Ingredients:
3 bananas, mashed |
2 eggs |
2 tablespoons oil |
2 cups buttermilk (or sour milk) |
1 tablespoon vanilla |
2 apples, peeled, cored, finely chopped |
3/4 cup dates, chopped |
3/4 cup walnuts, chopped |
1 cup blueberries |
2 teaspoons cinnamon |
1 1/2 cups flour |
1 3/4 cups whole wheat flour |
1 cup brown sugar |
1/2 cup quick oats |
1/2 cup oat bran |
1/2 cup wheat germ |
2 teaspoons baking soda |
2 teaspoons baking powder |
1/2 teaspoon salt |
Directions:
1. Whisk eggs and buttermilk. 2. Add remaining wet ingredients. 3. Mix. 4. In a separate bowl, mix together dry ingredients. 5. Add to wet ingredients, mixing until just combined. 6. Bake at 350 for 15-25 minutes (shorter for smaller muffins, longer for jumbo muffins). |
