A recipe from my friend Janette-it's really good! Ingredients:
3/4 cup coconut, dried shredded unsweetened |
3/4 cup raw sugar |
1 cup bran cereal |
250 g dried apricots, chopped |
1/2 cup pumpkin seeds |
1/2 cup self raising flour |
3/4 cup rolled oats |
1 1/2 cups skim milk |
Directions:
1. Preheat oven to moderate 180c. 2. Grease loaf tin. 3. Combine all ingredients mixing well. 4. Bake for about one hour then test in five minute intervals until a skewer inserted into the loaf comes out clean. 5. Remove from tin and cool on a wire rack. 6. Serve buttered if you like. |
