I have been craving this stew that my mom made when I was little..the recipe was never written down and I have not found it anywhere else. So I am trying to recreate it. This is the first attempt and I don't think it was that bad! Read more ! It's a good, easy, go-to. Any and all suggestions with spices or variations are welcome. Ingredients:
1 1/2 lbs ground beef |
1 medium yellow onion chopped |
2 t minced garlic |
2 t extra virgin olive oil |
2 pats of butter |
3 cups of water |
4 boullion cubes (i used chicken..what i had on hand) |
canned veggies (your choice mix and match, whatever you have on hand) |
i used |
stewed tomatoes with juice |
peas-drained |
green beans-drained |
sliced new potatoes-drained |
carrots-drained |
(here is where i would've added corn, but had run out) |
seasonings |
steak seasoning |
2 bay leaves-dried |
1 t thyme-dried (crush up in your palm for more flavor) |
salt and pepper of course |
Directions:
1. In skillet brown ground beef, sprinkle with steak seasoning 2. In large pot heat extra virgin olive oil with the butter, throw in onion and garlic, saute till soft. 3. Drain ground beef and add to onion & garlic, pour in tomoatoes, water, bouillion 4. Bring to boil then lower to simmer, add remaining veggies, bay leaves, thyme, and some more steak seasoning 5. Let simmer 30 min or more 6. Serve with biscuits, cornbread, crackers...or whatever floats your boat.. :) 7. *Note-you can either fish out the bay leaves or leave them in and whoever gets them is the 'lucky' one. Just make sure nobody tries to eat them. lol |
