Financiers are always made with almonds. I tried them with hazelnuts and they were just perfect!! Feel free to create some decorative pattern with powder sugar..It was really fun! Ingredients:
4 egg whites |
1 1/4 cups powdered sugar |
11 tablespoons butter, melted |
1/2 cup flour |
1/2 cup ground hazelnuts |
1/4 cup fresh raspberries or cherries |
Directions:
1. Preheat oven to 375 F. Grease a silicon financiers mold with butter. 2. In a large bowl whisk together the flour, ground nuts, and powdered sugar. Fold in the lightly beaten egg whites, vanilla, and the melted butter. Fill each mold almost to the rim and place one cherry on top. Bake for 12 minutes or until the 3. Financiers have become light brown on top and are springy to the touch. Remove from oven and let cool on a wire rack. These are best eaten the same day you make them. Decorate with sifted powder sugar. |
