Hazelnut Dressing / Vinaigrette |

A light, citrussy dressing, perfect for green salads or steamed green veggies. Ingredients:
3 ounces hazelnuts, toasted |
4 tablespoons olive oil |
1/2 orange, juice |
1/2 lemon, juice |
2 teaspoons sherry wine vinegar |
salt and pepper |
1 tablespoon parsley, chopped |
Directions:
1. Whizz the nuts in a food processor until finely chopped but not powdery, or chop by hand. 2. Mix with the oil, citrus juices, parsley and vinegar. 3. Season well. |
