Hazelnut Dressing / Vinaigrette

A light, citrussy dressing, perfect for green salads or steamed green veggies.
Ingredients:
3 ounces hazelnuts, toasted
4 tablespoons olive oil
1/2 orange, juice
1/2 lemon, juice
2 teaspoons sherry wine vinegar
salt and pepper
1 tablespoon parsley, chopped
Directions:
1. Whizz the nuts in a food processor until finely chopped but not powdery, or chop by hand.
2. Mix with the oil, citrus juices, parsley and vinegar.
3. Season well.
