Very easy. Reminds me of Puget Sound. Ingredients:
1/4 cup hazelnuts |
2 (6 ounce) salmon fillets |
1 tablespoon apple butter |
1/2 tablespoon dijon mustard |
1/4 teaspoon thyme |
1/4 teaspoon black pepper |
Directions:
1. preheat oven to 375°F. 2. Place hazelnuts on a baking sheet and bake for 8 minutes. Finely chop hazelnuts. 3. Increase oven to 450°F. 4. Combine apple butter, mustard, thyme, and pepper. Spread on salmon. Top with hazelnuts. 5. Bake until salmon just flakes with a fork, about 12 minutes, depending on thickness. 6. Goes great with herbed rice or savory couscous. |
