Hazelnut Coated Salmon

Very easy. Reminds me of Puget Sound.
Ingredients:
1/4 cup hazelnuts
2 (6 ounce) salmon fillets
1 tablespoon apple butter
1/2 tablespoon dijon mustard
1/4 teaspoon thyme
1/4 teaspoon black pepper
Directions:
1. preheat oven to 375°F.
2. Place hazelnuts on a baking sheet and bake for 8 minutes. Finely chop hazelnuts.
3. Increase oven to 450°F.
4. Combine apple butter, mustard, thyme, and pepper. Spread on salmon. Top with hazelnuts.
5. Bake until salmon just flakes with a fork, about 12 minutes, depending on thickness.
6. Goes great with herbed rice or savory couscous.
