From Rose Hill Extension Club, Chadron, Nebraska cookbook. Recipe submitted by Judy Hawthorne. Ingredients:
3/4 cup margarine |
1/2 cup granulated sugar |
1 teaspoon salt |
2 cups flour |
1/2 teaspoon cinnamon |
1 cup brown sugar, firmly packed |
1 egg |
1 teaspoon baking soda |
1 teaspoon vanilla extract |
1 1/2 cups rhubarb, chopped |
1/2 cup sugar |
1/2 cup chopped nuts |
1 teaspoon cinnamon |
Directions:
1. Combine all batter ingredients and pour into a 13 x 9 pan. 2. Sprinkle topping ingredients over batter and bake at 350*F for 40 minutes. |
