This is one of my family's favorite cakes and I make it often. Great refreshing flavor. Ingredients:
1 (18 ounce) lemon cake mix |
3 eggs |
1 1/3 cups water |
1/3 cup vegetable oil |
1 (8 ounce) package cream cheese (softened) |
1 large cool whip |
1 (3 1/2 ounce) package instant vanilla pudding |
1 (6 ounce) can crushed pineapple (drained) |
2 cups shredded coconut |
Directions:
1. Mix cake as directed. 2. Bake in 9 x 13 pan. 3. Cool. 4. Mix together Cool Whip, softened cream cheese and vanilla pudding. 5. Smooth over cake. 6. Spread drained pineapple over top. 7. Sprinkle evenly with coconut. 8. Refrigerate. |
