this sounded so good to me with the pineapple, bananas and coconut in it..... the recipe is from the: Aloha Crater Lodge in Volcano 11-3966 Lanihuli Road Volcano, HI 96785 Ingredients:
• 1/2 cup butter or margerine |
• 1 cup sugar |
• 2 cups flour |
• 1 teaspoon baking powder |
• 1/2 teaspoon baking soda |
• 1/4 teaspoon salt |
• 2 eggs |
• 1/2 cup smashed bananas |
• 1/2 cup crushed pineapple with juice |
• 1/2 cup shredded coconut |
Directions:
1. preheat oven to 350 degrees. cream butter and sugar together. add all other ingredients one at a time and in order. mix until well blended. 2. place mixture in either muffin or loaf pan, about half way up. bake for up to 60 min or until done. let cool in pan for 15-30 min before cutting or serving |
