This version of candied sweet potatoes are great with BBQ chicken. Ingredients:
4 medium sweet potatoes |
1/2 cup unsalted butter |
1 cup light brown sugar |
1/2 cup water |
1/4 cup shredded coconut |
Directions:
1. Boil sweet potatoes in their jackets until tender, about 25 minutes. 2. Let cool, then peel and cut them unto slices about 1-1/2 thick. 3. In a large skillet, melt butter, then stir in brown sugar and water. 4. Cook on medium heat about 5 minutes, then reduce heat and add sweet potato slices to skillet. 5. Cook gently, tossing lightly to coat until sweet potatoes are glazed and heated through. Sprinkle with coconut, before serving. |
