HAWAIIAN SWEET POTATO PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Grimes Estate in Bryan, Texas in 1988. Ingredients:
2 large peeled sweet potatoes baked |
1/2 stick salted butter |
1/2 cup light brown sugar |
1/2 cup granulated sugar |
2 large eggs beaten |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/2 tablespoon vanilla extract |
5 ounce can evaporated milk |
1/4 cup crème of coconut |
1/2 teaspoon salt |
Directions:
1. Mix all ingredients except eggs with whisk or mixer until creamy. 2. Add beaten eggs to mixture then stir well and pour into unbaked pie shell. 3. Bake at 350 for 1 hour then cool thoroughly before slicing. |
