Here is a no-bake pie filling made without a pudding-type filling. The only thing you bake is your pie crust. NOTE: Cooking time does not include chilling time or the time to bake the pie crust. Ingredients:
4 tablespoons flour |
1 cup sugar |
14 ounces crushed pineapple, with juice |
2 large bananas, sliced |
1 cup coconut, flaked |
1/2 cup nuts, finely chopped (i use pecans, but try macadamias) |
1 -9 inch pie shell, baked |
Directions:
1. In a saucepan, mix together the flour and sugar. 2. Add the crushed pineapple with juice. 3. Cook over medium heat until thick, stirring constantly. 4. Pour half of the mixture into the pie shell; cool. 5. When filling is cooled, add a layer of bananas, a layer of coconut and finally the chopped nuts. 6. Top with the rest of the pineapple mixture. 7. Chill. (I like to chill this for at least 4 hours) 8. Before serving spread with whipped cream or Cool Whip. |
